Amino Acid Composition of the Seeds of Three Trigonella Species Growing In Turkey

Abstract


The aim of the present study was to determine amino acid composition of the seeds of Trigonella kotschyi Fenzl (endemic), Trigonella cilicica Hub.-Mor. (endemic) and Trigonella fillipes Boiss. which are growing wild in Turkey. The amino acid composition of the each species was determined by using RP-HPLC technique. The results of the study revealed that lysine (1624-2093 mg/100 g) and leucine (1547-1822 mg/100 g) were the main essential amino acids, and glutamic acid (4507-6456 mg/100 g) and aspartic acid (3517-5780 mg/100 g) were the main non-essential amino acids. T. filipes had the highest content of leucine (1822±0.04 mg/100 g) and glutamic acid (6456±0.06 mg/100 g). Lysine is the most abundant essential amino acid with the amount of 2093±0.05 mg/100 g in T. cilicica. Additionally, the highest amount of aspartic acid (5780±0.08 mg/100 g) was observed in T. kotschyi.
