A Research on Determination of Supply Types of Maras Tarhana at Kahramanmaras Vocational School Students

Abstract


Tarhana is a traditional food to belong cultural characteristics of our country. Combinations of tarhana indicate differences from region to region as method of production and consumption forms. Maras tarhana is seperated from similiars with its own characteristics. In producing of tarhana cracked wheat and yoghurt are used, usually black cumin and oregano are added to give aroma. The process of Maras tarhana is difficult and is spent long time. In ancient times tarhana is being produced in house. But nowadays it has become widespread in factory production. However, there are still people whom produce homemade tarhana. Although some people prefer to buy tarhana as order produce.

The purpose of this study is to determine; Maras Tarhana's supply types and causes as own production, homemade/order production or factory production among the students studying different departments in Kahramanmaras Vocational School. For this purpose, literature search were made and quantitative research methods were used.

The research has been conducted with students of Kahramanmaras Vocational School (n=435) by applying face to face interview technique. Some of the students say “prefer definitely the homemade/order procedure” (n=185).  This supply form is thought of “Better quality” (%71.2) by them. Some of them who “prefer definitely the factory production tarhana” (n=33). Purchase from factory is thought of “Better controlled” by them (%40,5).

The students choose “I prefer definitely produce myself instead of buying factory production tarhana,” because of “They do not believe that factory production tarhana is hygienic” (%36,8).

The students choose “I prefer definitely produce myself instead of buying homemade production tarhana,” because of “They do not believe that homemade production tarhana is reliable” (%27,3).

By this research were made current situation analysis of supplying types of Maras Tarhana. Especially aimed to determine students' perceptions about the products and the factories that produce industrial tarhana. Factories will be able to change the negative perception about themselves and their products, and improve on products by determining current perception.
