Usage Possibilities of Mathematical Modelling in Drying Technology

Abstract


Drying, which is one of the oldest preservation methods, is controlled application of heat for evaporation a substantial portion of the water contained in the food. Accurate analysis of the parameters of simultaneous heat and mass transfer mechanisms in the drying process is very important for in terms of design and process modelling. Modelling is based on a physical process of identifying and established mathematical equivalence principlebe solved numerically on computers. The success of the model depend on accurate knowledge of the process parameters. By implementing of modelling, the difficulty of the trial and error studies resulted by empirical phases is being eliminated; the loss of man power and energy is being reduced to minimum; fast and practical approach on pre-design, optimization and process control is obtained. In this review, the drying processes and the heat and mass transfer mechanisms were discussed in detail. The most used mathematical models in the drying technology were given and the importance of the models in terms of drying technology, were summarized.
